Ingredients

Scale
  • 1 pound breakfast sausage (or Italian/spicy sausage)

  • 6 large eggs

  • 1 cup milk

  • 1 cup shredded cheddar cheese (or preferred blend)

  • 2 cups bread cubes (optional)

  • ½ teaspoon salt

  • ½ teaspoon black pepper

  • ½ teaspoon garlic powder

  • ¼ teaspoon smoked paprika

  • ½ cup diced bell peppers (optional)

  • ½ cup chopped spinach (optional)

  • ¼ cup diced onions (optional)

Instructions

  1. Preheat the Oven
Preheat your oven to 375°F (190°C). Grease a 7×11-inch or 8×11-inch baking dish with butter or nonstick spray.

  2. Cook the Sausage
In a skillet over medium heat, brown the sausage, breaking it into crumbles. Drain excess grease and set aside.

  3. Prepare the Egg Mixture
In a large bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and smoked paprika until smooth.

  4. Assemble the Casserole
In the greased baking dish, layer:

    • cooked sausage

    • optional veggies

    • shredded cheese
      Add bread cubes if using.
Pour the egg mixture evenly over the layers.

  5. Bake
Bake for 30–40 minutes, or until the center is set and the top is lightly golden.

  6. Cool & Serve
Allow the casserole to rest for 5 minutes before slicing. Serve warm and enjoy!

Notes

  • Make ahead: Assemble the casserole the night before and refrigerate. Bake in the morning.

  • Lower-carb version: Skip the bread cubes and add extra veggies.

  • Cheese options: Try Monterey Jack, pepper jack, mozzarella, or a blend.

  • Add flavor: Mix in cooked bacon, ham, or sautéed mushrooms.

  • Freezer-friendly: Bake, cool, slice, and freeze for easy reheating.
