High-protein burritos stuffed with pulled rotisserie chicken, onions, peppers, corn, black beans, and a creamy green chile cottage cheese sauce.
1 lb pulled rotisserie chicken
14 oz (3 cups) frozen onions and peppers*
15 oz can black beans, drained and rinsed
1 cup (140 g) frozen fire-roasted corn
8 flour protein tortillas**
2 cups low-fat cottage cheese
4 oz diced green chiles
1 packet taco seasoning
2 oz Colby Jack cheese
1–2 tbsp water (as needed to thin)
Make the cheese sauce:
In a blender or food processor, combine cottage cheese, green chiles, taco seasoning, and Colby Jack cheese.
Blend until smooth, adding 1–2 tbsp water if needed to thin. Set aside.
Cook the filling:
Heat a large pan over medium heat. Add frozen onions and peppers. Cook 4–5 minutes until thawed.
Stir in chicken, beans, and corn. Cook 2–3 more minutes, until heated through.
Combine:
Remove from heat and stir in the cheese sauce until evenly coated.
Assemble burritos:
Add ~8 oz filling to each tortilla. Roll tightly.
Grill burritos:
Heat a griddle or skillet over medium. Grill burritos 30–60 seconds per side, until golden brown.
Frozen onions & peppers: Trader Joe’s fire-roasted mix works great, but Kroger and Whole Foods have similar options. Fresh works too—use about 3 cups diced.
Tortillas: Recipe uses Counter protein tortillas (200 cal, 11g protein each). If swapping, just note nutrition will vary.
