  • 8 slices rye bread (or sourdough/whole-grain)

  • 3 tbsp unsalted butter (or ghee/vegan butter)

  • 4 slices Swiss cheese (or Gruyère/provolone)

  • 4 slices cheddar cheese (or pepper jack)

Instructions

  • Prepare the Secret Sauce:
    Whisk together mayonnaise, ketchup, Dijon mustard, pickle juice, paprika, and garlic powder. Taste and adjust if needed. Refrigerate ahead for deeper flavor.

  • Caramelize the Onions:
    Heat 1 tbsp olive oil in a skillet over medium heat. Add onions and a pinch of salt. Cook 12–15 minutes until golden and tender, stirring occasionally. Add a splash of water to deglaze if onions stick.
