Perfect for busy weeknights, meal prep, or when you want something wholesome without the fuss.
1 large red bell pepper, cut into 1-inch pieces
1 large orange bell pepper, cut into 1-inch pieces
1 red onion, peeled and cut into 1-inch pieces
1 medium zucchini, cut into 1-inch pieces
1 tablespoon avocado oil (or olive oil)
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon Italian seasoning
½ teaspoon kosher salt
Pinch of black pepper
1 (12 oz) package chicken sausage (Italian flavor recommended), sliced into ¾-inch rounds
1. Prep the Veggies
Chop all vegetables into even 1-inch pieces. Place them in a large mixing bowl and drizzle with avocado oil. Toss to coat.
2. Season Everything
In a small bowl, combine garlic powder, onion powder, Italian seasoning, salt, and pepper. Sprinkle the spice mix over the veggies and toss until evenly coated.
3. Add the Sausage
Add the sliced chicken sausage to the bowl and mix everything together until well combined.
4. Air Fry
Preheat your air fryer to 390°F (200°C) if needed. Spray the air fryer basket with nonstick cooking spray, then add the sausage and veggie mixture in a single layer.
Cook for 10 minutes, shaking or flipping halfway through for even cooking. (Cook in batches if needed.)
5. Serve and Enjoy
Serve hot on its own, or pair with cauliflower rice, brown rice, or quinoa for a heartier meal.
Cut evenly: Keeping pieces the same size ensures even cooking.
No air fryer? Roast on a sheet pan at 425°F (220°C) for 20–25 minutes, stirring halfway.
Switch it up: Try turkey sausage, smoked sausage, or your favorite plant-based option.
Add flavor: A drizzle of balsamic glaze or squeeze of lemon juice at the end adds a tasty finishing touch.
