  • 1 tbsp avocado oil

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp Italian seasoning

  • ½ tsp kosher salt

  • Pinch of black pepper

  • 1 package (12 oz) chicken sausage, sliced into ¾-inch rounds (Italian flavor works great)

Instructions

  • Prep the Veggies:
    Chop the vegetables and place them in a large bowl. Drizzle with avocado oil and toss to coat evenly.

  • Season:
    In a small bowl, mix garlic powder, onion powder, Italian seasoning, salt, and black pepper. Sprinkle the spice blend over the veggies and toss to coat.

  • Add Sausage:
    Slice the chicken sausage into rounds and add to the bowl with the vegetables. Toss everything together to combine.

  • Cook in the Air Fryer:
    Preheat the air fryer to 390°F (if needed) and lightly spray the basket with cooking spray.
    Add the sausage and vegetables in an even layer. Cook for 10 minutes, flipping halfway through. You may need to cook in batches depending on your air fryer size.

  • Serve:
    Remove from the air fryer and serve immediately as-is, or with cooked cauliflower rice, quinoa, or brown rice for a complete meal.
