  • Wash and halve or quarter the baby potatoes for even cooking.

  • Slice the smoked sausage into ¼-inch rounds.

  • In a large bowl, toss the potatoes with olive oil and half of the seasoning mixture until evenly coated.

3. Assemble the Dish

  • Line a baking sheet with parchment paper or lightly grease it.

  • Spread the seasoned potatoes in a single layer. Avoid overcrowding for even roasting.

  • Scatter the sliced sausage over the potatoes.

4. Roast

5. Add Cheese

  • Remove the baking sheet from the oven and sprinkle shredded cheddar over the potatoes and sausage.

  • Return to the oven and bake for 5 more minutes until cheese is melted and bubbly.

6. Serve

  • Garnish with chopped parsley and serve hot.

  • Optional: add a dollop of sour cream for extra creaminess.

Notes

  • Cheese Variations: Try mozzarella, pepper jack, or Monterey Jack for a different twist.

  • Extra Veggies: Add bell peppers or red onions to the roasting pan for more flavor.

  • Crispier Potatoes: Use a high-sided baking sheet and avoid overcrowding.
