Instructions

  1. Preheat the oven: Preheat to 375°F (190°C). Lightly grease a 9×9-inch baking dish (or 8×8-inch for a thicker casserole).

  2. Make the meatloaf base: In a large bowl, combine ground beef, breadcrumbs, egg, milk, chopped onion, garlic powder, salt, pepper, Worcestershire sauce, and half of the ketchup. Mix until well combined.

  3. Form and bake: Press the meat mixture evenly into the prepared dish. Spread the remaining ketchup on top. Bake 20–25 minutes, until the meat is fully cooked.

  4. Add the topping: Spread mashed potatoes evenly over the meatloaf. Sprinkle shredded cheese and crumbled bacon on top.

  5. Bake again: Return to the oven and bake 10–15 minutes, until the cheese is melted and bubbly.
