This homemade Beefy Melt Burrito gives you all the cheesy, crunchy, savory flavors of the Taco Bell favorite—right from your kitchen. Filled with seasoned beef, fluffy Mexican rice, nacho cheese, crunchy Fritos, shredded cheese, and sour cream, it’s the perfect quick meal for busy nights or game-day snacking!
1 lb lean ground beef
1 packet (1 oz) taco seasoning
¼ cup water or beef broth
1 cup refried beans (optional)
2 cups cooked Mexican rice (instant or homemade)
4 large burrito-sized flour tortillas
2 cups Fritos (or Doritos for a fun twist)
1 cup warm nacho cheese dip
1 cup shredded Mexican cheese blend
½ cup sour cream
Add ground beef to a skillet over medium heat.
Cook until browned, breaking it apart as it cooks.
Add taco seasoning and water/broth.
Stir and simmer for 1–2 minutes.
Mix in refried beans if using.
Cook Mexican rice according to the package or use leftovers.
