  • 2 cups heavy cream (or alternative milk, 1:1 swap)

  • 1 tbsp flour

  • ½ cup chopped parsley

  • 8 oz (225 g) rigatoni pasta, cooked al dente

  • 1 tsp smoked paprika

  • 1 tsp garlic powder

  • 1 tsp sugar

  • Salt & black pepper, to taste

  • Freshly grated Parmesan, for garnish (optional)

Instructions

  • Prep Ingredients:

    • Mince garlic and halve cherry tomatoes.

  • Sauté Garlic:

    • Heat olive oil in a large pan over medium heat.

    • Add minced garlic and ½ tsp salt, sauté until golden and fragrant (about 5 minutes).

  • Cook Tomatoes:

    • Add cherry tomatoes and another ½ tsp salt.

    • Sauté 10–15 minutes, stirring occasionally, until tomatoes soften and release their juices.

  • Deglaze Pan & Add Flavorings:

    • Pour in white wine, simmer for 5 minutes.

    • Stir in chili flakes (if using) and tomato paste.

  • Add Cream & Thicken:

    • Pour in heavy cream.

    • In a small bowl, whisk flour with 2 tbsp water to make a slurry, then slowly stir into sauce.

    • Cook 5–10 minutes, stirring occasionally, until sauce thickens.

  • Season & Combine:

    • Stir in parsley, smoked paprika, garlic powder, sugar, salt, and pepper.

    • Add cooked rigatoni, toss to coat, keeping pasta al dente.

  • Finish & Serve:

    • Let pasta simmer in sauce for 5 minutes.

    • Remove from heat, cover, and rest for 5 minutes.

    • Garnish with Parmesan, extra parsley, and black pepper before serving.

  • Cream Options: Use half-and-half or whole milk for a lighter version.
