This Honey BBQ Chicken Rice is a sweet, smoky, and satisfying one-pan meal. Tender chicken cooks in a sticky honey-BBQ glaze, while the rice absorbs all the delicious flavor. It’s easy, comforting, and perfect for weeknights or meal prep.
1 lb boneless, skinless chicken thighs
1 cup long-grain rice
2 cups chicken broth
½ cup BBQ sauce
¼ cup honey
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon smoked paprika
Salt and pepper, to taste
1 cup mixed vegetables (optional)
Chopped green onions, for garnish
Season the Chicken:
Sprinkle chicken thighs with garlic powder, onion powder, smoked paprika, salt, and pepper.
Sear:
Heat a skillet over medium heat. Sear chicken for 3–4 minutes per side, until golden. Remove and set aside.
Make the Sauce:
In a bowl, mix together the BBQ sauce and honey.
Toast the Rice:
In the same skillet, add the uncooked rice and toast for 1–2 minutes until lightly fragrant.
Add Liquid:
Pour in the chicken broth and half of the honey-BBQ sauce. Stir to combine.
Simmer:
Place the chicken back in the pan. Spoon the remaining sauce over the top.
Cover and simmer on low for 15 minutes.
Add Veggies:
Add mixed vegetables (if using). Cover and cook for 5 more minutes, or until the rice is tender and the chicken is cooked through.
Finish:
Let rest for 5 minutes. Garnish with green onions and serve hot.
