For the Chicken and Zucchini Bake:

  • 4 boneless, skinless chicken breasts

  • 2 large zucchinis, sliced into 1/4-inch rounds

  • Salt and pepper, to taste

  • 1 cup cherry tomatoes, halved

  • ½ cup black olives, pitted and sliced

  • ½ cup sun-dried tomatoes, chopped

  • ½ cup crumbled feta cheese

  • ¼ cup fresh parsley, chopped (for garnish)

Optional:

  • ½ cup shredded mozzarella cheese

  • 1 tbsp balsamic vinegar, for drizzling

Instructions

1. Prep the Ingredients

  • Preheat the oven to 375°F (190°C).

  • Slice zucchini into thin rounds and pat dry to remove excess moisture.

  • Season chicken breasts with olive oil, oregano, basil, garlic powder, salt, and pepper.

  • Prepare the vegetables: halve cherry tomatoes, slice olives, chop sun-dried tomatoes.

2. Assemble the Dish

  • Place seasoned chicken breasts in the center of a lightly greased baking dish.

  • Layer zucchini slices around the chicken.

  • Scatter cherry tomatoes, olives, and sun-dried tomatoes over and around the zucchini.

3. Bake

  • Bake for 30–35 minutes, or until chicken reaches an internal temperature of 165°F (74°C) and zucchini is tender.

  • Remove from oven and sprinkle feta cheese (and mozzarella, if using) over the top.

  • Return to oven for 5–7 minutes, until cheese melts and is lightly golden.
