For the Chicken and Zucchini Bake:
4 boneless, skinless chicken breasts
2 large zucchinis, sliced into 1/4-inch rounds
1 tbsp olive oil
1 tsp dried oregano
1 tsp dried basil
½ tsp garlic powder
Salt and pepper, to taste
1 cup cherry tomatoes, halved
½ cup black olives, pitted and sliced
½ cup sun-dried tomatoes, chopped
½ cup crumbled feta cheese
¼ cup fresh parsley, chopped (for garnish)
Optional:
½ cup shredded mozzarella cheese
1 tbsp balsamic vinegar, for drizzling
Preheat the oven to 375°F (190°C).
Slice zucchini into thin rounds and pat dry to remove excess moisture.
Season chicken breasts with olive oil, oregano, basil, garlic powder, salt, and pepper.
Prepare the vegetables: halve cherry tomatoes, slice olives, chop sun-dried tomatoes.
Place seasoned chicken breasts in the center of a lightly greased baking dish.
Layer zucchini slices around the chicken.
Scatter cherry tomatoes, olives, and sun-dried tomatoes over and around the zucchini.
Bake for 30–35 minutes, or until chicken reaches an internal temperature of 165°F (74°C) and zucchini is tender.
Remove from oven and sprinkle feta cheese (and mozzarella, if using) over the top.
Return to oven for 5–7 minutes, until cheese melts and is lightly golden.
Sprinkle with fresh parsley and drizzle with balsamic vinegar if desired.
Serve with a side of quinoa, couscous, or a light salad for a complete meal.
Even cooking: Cut zucchini into uniform slices so they cook evenly.
Flavor boost: Marinate chicken in olive oil, garlic, and herbs for 30 minutes before baking.
Extra veggies: Add bell peppers, eggplant, or mushrooms for more variety.
Cheese alternative: Goat cheese works well if you prefer a tangier flavor.
