These Asian-inspired lettuce wraps are light, fresh, and packed with flavor. Tender ground beef is sautéed with garlic, ginger, and veggies, then tossed in a sweet and tangy sesame soy sauce.   • 2 tsp arrowroot powder or cornstarch

Filling

  • 1 tbsp olive oil

  • 1 lb ground beef

  • 2 cloves garlic, minced

  • 2 tsp fresh ginger, grated

  • 1 medium red bell pepper, finely diced

  • ½ cup shredded carrots

  • 4 green onions, sliced into 1-inch pieces

  • Kosher salt and black pepper, to taste

  • Sesame seeds, for garnish

  • 1 head Boston Bibb lettuce, leaves separated

  • Optional: steamed white rice or sautéed cauliflower rice for serving

Instructions

  • Make the sauce: In a small bowl or measuring cup, whisk together maple syrup, coconut aminos, rice vinegar, sesame oil, and red pepper flakes. Whisk in arrowroot powder until smooth. Set aside.

  • Cook beef: Heat olive oil in a skillet over medium-high heat. Add ground beef and cook, breaking it apart with a wooden spoon, until no longer pink (about 5 minutes).

  • Add aromatics: Stir in garlic and ginger; cook for 1–2 minutes until fragrant.

  • Add vegetables: Stir in bell pepper and carrots, cooking until slightly tender (3–4 minutes).

  • Finish with sauce: Pour sauce over the beef mixture. Stir well and simmer for 2–3 minutes until thickened. Adjust seasoning with salt and pepper.

  • Add green onions: Stir in sliced green onions, then remove from heat.

  • Assemble wraps: Spoon the beef mixture into lettuce leaves. Garnish with sesame seeds. Serve plain or with rice/cauliflower rice for extra heartiness.
