  • ½ teaspoon freshly ground black pepper

  • 6 chicken thighs (bone-in, skin-on)

  • 1 medium zucchini, halved lengthwise and sliced

  • 1 yellow bell pepper, chopped into 1-inch pieces

  • ½ large red onion, cut into wedges

  • 1 pint cherry or grape tomatoes

  • ½ cup kalamata olives, pitted

  • ¼ cup feta cheese, crumbled

  • 2 tablespoons finely chopped fresh parsley

Instructions

1. Make the Marinade
Preheat the oven to 425°F (220°C). In a small bowl, whisk together olive oil, lemon juice, garlic, oregano, thyme, Dijon mustard, salt, and pepper.

2. Marinate the Chicken
Place chicken thighs in a large bowl and pour in ⅔ of the marinade. Toss well to coat. Let sit for 10–15 minutes while preparing the vegetables.

3. Prep the Vegetables
On a large sheet pan, spread out zucchini, bell pepper, red onion, and tomatoes. Drizzle with the remaining marinade and toss to coat evenly.

4. Bake the Chicken & Veggies
Add marinated chicken thighs to the pan, nestling them between the vegetables. Roast for 30 minutes.

5. Add Final Touches
Remove from the oven, sprinkle on the kalamata olives and feta cheese, and return to the oven for another 10–15 minutes, or until chicken is golden and reaches 165°F (74°C) internally.

6. Serve
Sprinkle with fresh parsley and serve warm. Enjoy as is, or pair with warm pita bread or a side of rice!
