1 lb lean ground beef
1 cup chunky salsa
1 (10 oz) can red enchilada sauce
8 (8-inch) tortillas (flour preferred; corn can be used traditionally)
1 (8 oz) package shredded Mexican blend cheese (about 2 cups)
Preheat your oven to 350°F (175°C).
Lightly spray a 9×13-inch baking dish with nonstick cooking spray.
In a large skillet, brown the ground beef over medium-high heat.
Drain excess fat.
Return pan to medium-low heat and stir in the chunky salsa.
Cook until warmed through, then remove from heat.
Pour half of the enchilada sauce into the bottom of the baking dish and spread evenly.
