  • 1 cup panko breadcrumbs

  • Salt & pepper, to taste

  • Fresh parsley, chopped (optional — for garnish)

Instructions

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

  • In a large bowl, mix together the mozzarella and Parmesan cheese.

  • In a separate bowl, whisk eggs with salt and pepper.

  • Shape the cheese mixture into golf ball-sized balls.

  • Dip each ball into the egg mixture, then roll in panko breadcrumbs until well coated.

  • Place on the prepared baking sheet and bake 15–20 minutes, until golden and crispy.
