2 lbs beef stew meat, cubed
4 carrots, sliced
4 potatoes, diced
1 onion, chopped
3 cups beef broth
2 tbsp tomato paste
1 tsp thyme
Salt and pepper, to taste
Add beef, carrots, potatoes, and onion to the Crockpot.
Stir in beef broth, tomato paste, thyme, salt, and pepper until well combined.
Cover and cook on low for 7–8 hours, until beef is tender and vegetables are cooked through.
