This cozy Crock Pot Beef Stew is the ultimate comfort food! Tender chunks of beef, hearty potatoes, and sweet carrots slow-cooked all day in a flavorful onion and celery base. 2 packages (1 oz each) dry onion soup mix
½ teaspoon paprika
2 pounds beef stew meat (or a boneless beef roast), cut into 1-inch pieces
5 medium potatoes, peeled and diced
2–3 cups baby carrots
1 small yellow onion, chopped
2 cans (10 oz each) cream of celery soup
1 cup ketchup (or substitute tomato sauce if preferred)
In a large plastic bag, combine the dry onion soup mix and paprika. Add the beef pieces and shake to coat evenly. (You may need to do this in two batches.)
Place the coated beef evenly in a greased 7-quart Crock Pot. Top with diced potatoes, carrots, and chopped onion.
In a small bowl, mix the cream of celery soup with ketchup. Pour this mixture over the meat and vegetables.
Cover and cook on low heat for 7–8 hours, until the meat is tender and vegetables are cooked through.
Stir everything together before serving. Enjoy warm!
For extra flavor, brown the beef in a skillet for 3–4 minutes per side before adding to the Crock Pot.
