8 oz (225 g) uncooked pasta
2 tbsp butter
2–3 cloves garlic, minced
2 tbsp tomato paste
1 (14 oz / 400 g) can tomato sauce
¾ cup heavy cream or whipping cream
¼ tsp Italian seasoning
Salt & pepper, to taste
Freshly grated parmesan, for serving
Cook the Pasta:
Boil a large pot of salted water and cook pasta al dente according to package instructions.
Make the Sauce:
While the pasta cooks, melt butter in a skillet over medium-high heat. Add garlic and sauté for about 1 minute, stirring constantly.
Combine Ingredients:
Stir in tomato paste, tomato sauce, cream, and Italian seasoning. Let the sauce cook for 5 minutes or until slightly thickened, keeping it at a gentle bubble.
Season:
Taste and season with salt and pepper. If the sauce tastes too tangy, add a pinch of sugar to balance the flavor.
Toss and Serve:
Drain the pasta and toss it with the sauce. If the sauce is too thick, add a splash of hot pasta water. Serve immediately with plenty of freshly grated parmesan.
Use heavy cream rather than lower-fat substitutes to prevent curdling.
Adjust the consistency with pasta water if needed — it helps the sauce cling to the noodles.
Fresh basil or parsley sprinkled on top adds a burst of freshness.
Make it protein-packed by adding grilled chicken, shrimp, or crispy pancetta.
