  • 2 tbsp butter

  • 23 cloves garlic, minced

  • 2 tbsp tomato paste

  • 1 (14 oz / 400 g) can tomato sauce

  • ¾ cup heavy cream or whipping cream

  • ¼ tsp Italian seasoning

  • Salt & pepper, to taste

  • Freshly grated parmesan, for serving

Instructions

  • Cook the Pasta:
    Boil a large pot of salted water and cook pasta al dente according to package instructions.

  • Make the Sauce:
    While the pasta cooks, melt butter in a skillet over medium-high heat. Add garlic and sauté for about 1 minute, stirring constantly.

  • Combine Ingredients:
    Stir in tomato paste, tomato sauce, cream, and Italian seasoning. Let the sauce cook for 5 minutes or until slightly thickened, keeping it at a gentle bubble.

  • Season:
    Taste and season with salt and pepper. If the sauce tastes too tangy, add a pinch of sugar to balance the flavor.

  • Toss and Serve:
    Drain the pasta and toss it with the sauce. If the sauce is too thick, add a splash of hot pasta water. Serve immediately with plenty of freshly grated parmesan.
