8 cloves garlic, minced
3 cups cherry tomatoes, halved
4 tbsp olive oil
1 cup dry white wine
1 tsp white sugar
1 tsp chili flakes
2 tbsp tomato paste
2 cups heavy cream (or 1:1 alt milk swap)
1 tbsp flour + 2 tbsp water (slurry)
½ cup chopped parsley
8 oz rigatoni pasta, cooked al dente
1 tsp each: smoked paprika, garlic powder, sugar
Salt & pepper, to taste
Freshly grated Parmesan, optional
Sauté garlic: Heat olive oil in a large pan over medium heat. Add garlic and a pinch of salt; cook 5 minutes until golden and fragrant.
Cook tomatoes: Add cherry tomatoes and another pinch of salt. Sauté 10–15 minutes until soft and saucy.
Deglaze: Pour in white wine and simmer 5 minutes. Stir in chili flakes and tomato paste.
Make it creamy: Pour in cream, then slowly whisk in the flour slurry to thicken. Simmer 5–10 minutes, stirring often.
Season: Add parsley, paprika, garlic powder, sugar, salt, and pepper.
Combine: Toss in cooked rigatoni, stirring gently to coat. Simmer 5 minutes more for the flavors to meld.
Serve: Garnish with Parmesan, parsley, and black pepper.
Use freshly grated Parmesan and al dente pasta—it makes all the difference in texture and taste!
