Taco Ranch Bites are bite-sized, cheesy, and packed with bold taco flavor. Made with seasoned ground beef, creamy ranch dressing, and melty cheddar cheese, all baked in crispy phyllo tart shells, these little appetizers are perfect for parties, game day, or quick snacks. They’re easy to prepare, freezer-friendly, and always a crowd favorite.
1 lb ground beef (preferably lean)
1 oz packet taco seasoning
1 can (10 oz) diced tomatoes with green chiles, undrained
2 cups shredded cheddar cheese (aged cheddar for best flavor)
8 oz Ranch dressing
5 packs frozen phyllo tart shells (15-count each)
Preheat the Oven
Preheat oven to 350°F (175°C).
Cook the Beef
In a skillet over medium heat, brown the ground beef until fully cooked and no longer pink. Drain excess grease if needed.
Season the Meat
Stir in taco seasoning and add the diced tomatoes with green chiles (do not drain). Simmer for 5 minutes, then remove from heat.
Make the Filling
In a large bowl, mix shredded cheddar cheese and Ranch dressing until well combined. Fold in the cooked taco meat mixture.
Assemble the Bites
Spoon the filling evenly into the frozen phyllo tart shells.
Optional: At this stage, the filled shells can be frozen for later use.
Bake
Arrange tarts on a baking sheet and bake for 8–10 minutes, or until heated through and bubbly.
If baking from frozen, add 2–3 extra minutes.
