Quesadillas
4 medium tortillas (flour, whole wheat, or gluten-free)
2 cups fresh spinach, chopped
1 cup feta cheese, crumbled
2 tablespoons olive oil or butter (for cooking)
Optional Add-Ins
1/4 cup sun-dried tomatoes, chopped
1/4 cup black olives, sliced
1/2 cup cooked grilled chicken, diced
Wash and chop spinach.
Crumble the feta into a bowl.
Prepare any optional add-ins as desired.
Lay a tortilla flat and sprinkle spinach and feta over one half.
Add optional fillings if using.
Fold in half and press gently.
Heat a skillet over medium heat with olive oil or butter.
