6 boneless, skinless chicken thighs
1 teaspoon kosher salt
½ teaspoon black pepper
½ teaspoon paprika
2 tablespoons vegetable oil
1 recipe Bang Bang sauce (homemade) or 1 cup store-bought
Green onions, chopped (for garnish)
Season the chicken
In a small bowl, mix together the salt, black pepper, and paprika. Sprinkle the seasoning evenly over both sides of the chicken thighs.
Cook the chicken
Heat the vegetable oil in a large nonstick skillet over medium heat. Once hot, add the chicken thighs (cook in batches if needed). Cook for 5 minutes.
Flip and finish cooking
Flip the chicken, reduce heat to medium-low, and cook for another 5 minutes, or until the internal temperature reaches 165°F (74°C).
Rest the chicken
Remove the cooked chicken from the skillet and place on a plate. Loosely cover to keep warm.
Heat the sauce
Pour the Bang Bang sauce into the same skillet. Stir and scrape up any browned bits from the bottom of the pan. Simmer for 1–2 minutes, until warmed through.
Coat and serve
Return the chicken to the skillet and toss to coat evenly in the sauce. Garnish with chopped green onions and serve immediately.
Use thighs for juiciness, but chicken breasts can work if cut evenly.
Do not overcrowd the pan to ensure proper browning.
Adjust the spice level by adding more or less chili sauce in the Bang Bang sauce.
Let the sauce simmer briefly to intensify flavor without thickening too much.
Serve immediately for the best creamy texture.
