Ingredients

Scale
  • 1 lb breakfast sausage

  • 1 (30 oz) package frozen hash browns, thawed

  • 1½ cups shredded cheddar cheese

  • 1 cup milk

  • 8 large eggs

  • ½ teaspoon salt

  • ½ teaspoon black pepper

  • ½ teaspoon garlic powder

  • ¼ teaspoon onion powder

Instructions

  • Preheat the Oven
Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or cooking spray.

  • Cook the Sausage
In a large skillet over medium heat, cook the sausage until fully browned, breaking it into small pieces as it cooks. Drain excess grease.

  • Layer the Hash Browns
Spread the thawed hash browns evenly in the prepared baking dish. Sprinkle the cooked sausage over the top.

  • Add the Cheese
Sprinkle the shredded cheddar cheese evenly over the sausage and hash browns.

  • Mix the Eggs
In a large bowl, whisk together the eggs, milk, salt, black pepper, garlic powder, and onion powder until well combined.

  • Assemble the Casserole
Pour the egg mixture evenly over the layered ingredients in the baking dish.

  • Bake
Bake uncovered for 45–50 minutes, or until the casserole is set and the top is golden brown. A knife inserted into the center should come out clean.

  • Serve
Let cool for a few minutes before slicing. Serve warm and enjoy.

Notes

  • Make it ahead: Assemble the casserole the night before, cover, and refrigerate. Bake fresh in the morning.

  • Freeze-friendly: Cool completely, then freeze in portions for easy reheating.

  • Add vegetables: Bell peppers, onions, or spinach add color and nutrition.

  • Change the cheese: Monterey Jack, Colby-Jack, or pepper jack all work well.
