  • 8 breakfast sausage links

  • 4 large eggs

  • ½ cup milk

  • 1 teaspoon vanilla extract

  • 1 teaspoon cinnamon

  • 1 tablespoon butter (for cooking)

  • Maple syrup (for serving)

  • Powdered sugar (optional, for dusting)

Instructions

1. Cook the Sausage

Cook breakfast sausage links according to package directions.
Set aside.

2. Prepare the Bread

Trim the crusts from each slice of bread.
Use a rolling pin to flatten each slice completely.

3. Make the Egg Mixture

In a shallow bowl, whisk together:

  • Eggs

  • Milk

  • Vanilla

  • Cinnamon

Mix until smooth.

4. Assemble the Roll-Ups

Place a cooked sausage at one end of a flattened bread slice.
Roll tightly (use a toothpick to secure if needed).
Repeat with all bread slices.

5. Cook the Roll-Ups

Heat butter in a skillet over medium heat.
Dip each roll-up into the egg mixture, making sure it is fully coated.

Cook for 3–4 minutes, turning often until all sides are golden and lightly crisp.

Remove toothpicks before serving.

6. Serve
