Red Lobster Biscuit Chicken Pot Pie

Red Lobster Biscuit Chicken Pot Pie is the ultimate comfort food, combining a creamy chicken and vegetable filling with fluffy, cheesy biscuits inspired by the famous Red Lobster cheddar bay biscuits. This cozy, oven-baked dish is easy to prepare, family-friendly, and perfect for weeknight dinners when you want something warm, hearty, and satisfying without too much effort.

Ingredients

Scale

Chicken Filling

  • 3 cups cooked chicken, diced (rotisserie chicken works great)

  • 1 cup frozen mixed vegetables (peas, carrots, corn)

  • 1 cup cream of chicken soup

  • ½ cup chicken broth

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • Salt and black pepper, to taste

Biscuit Topping

  • 2½ cups all-purpose flour

  • 1 tablespoon baking powder

  • 1 teaspoon salt

  • ½ cup unsalted butter, cold and cubed

  • 1 cup shredded cheddar cheese

  • ¾ cup milk

  • 1 tablespoon garlic powder (for that Red Lobster-style flavor)

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a large bowl, combine the cooked chicken, frozen vegetables, cream of chicken soup, chicken broth, garlic powder, onion powder, salt, and pepper. Mix well.

  3. Spread the chicken mixture evenly into an oven-safe casserole or pie dish.

  4. In a separate bowl, whisk together the flour, baking powder, and salt.

  5. Cut the cold butter into the flour mixture until it resembles coarse crumbs.

  6. Stir in the shredded cheddar cheese and garlic powder.

  7. Gradually add the milk and mix just until combined. Do not overmix.

  8. Drop spoonfuls of biscuit dough evenly over the chicken filling.

  9. Place the dish on a baking sheet and bake for 30–40 minutes, or until the biscuits are golden brown and the filling is bubbly.

  10. Let cool for 5 minutes before serving.

Notes

  • Use rotisserie chicken to save time and add extra flavor.

  • Keep the butter cold for fluffy, tender biscuits.

  • If the biscuits brown too quickly, loosely cover the dish with foil.

  • Add a pinch of parsley or dried herbs to the biscuit dough for extra flavor.

  • For a richer filling, stir in a splash of heavy cream or milk.
