Pretzel Bites

These homemade pretzel bites are soft and fluffy on the inside with that classic chewy pretzel crust on the outside. The quick baking soda boil gives them their signature texture, while baking them at high heat creates a beautiful golden color. They’re easy to make, perfect for sharing, and even better when served warm with a simple honey mustard sauce.

Ingredients

  • 4½ cups all-purpose flour (spooned and leveled, plus more if needed)

  • 1 tbsp sugar

  • 2¼ tsp instant yeast

  • 1 tsp salt

  • 1¾ cups warm milk or water (about 110°F / 43°C)

  • 2 tbsp melted butter

  • 9 cups water

  • ½ cup baking soda

  • 1 large egg, mixed with 1 tbsp water (egg wash)

  • Coarse salt, for topping

Instructions

  1. Make the Dough
    In the bowl of a stand mixer fitted with a dough hook, combine flour, sugar, yeast, salt, warm milk, and melted butter. Mix on medium speed for 4–5 minutes until a smooth dough forms. If sticky, add a little more flour.

  2. Let It Rise
    Cover the bowl and let the dough rise in a warm place for 30–60 minutes, or until doubled in size.

  3. Prep the Oven & Water Bath
    Preheat oven to 450°F (230°C). Line two baking sheets with parchment paper.
    Bring the 9 cups of water and baking soda to a boil in a large pot.

  4. Shape the Pretzel Bites
    Divide the dough into 12 pieces. Roll each piece into a ¾-inch thick rope and cut into 1–2 inch bites.

  5. Boil
    Drop pretzel bites into the boiling water for 30 seconds, then remove with a slotted spoon and place on prepared baking sheets, leaving space between them.

  6. Bake
    Brush each bite with egg wash and sprinkle with coarse salt.
    Bake for 12–14 minutes, until deep golden brown.

  7. Serve
    Serve warm with honey mustard or your favorite dipping sauce.

Notes

  • Don’t skip the baking soda bath: This is what gives pretzel bites their chewy crust and authentic flavor.

  • Warm liquid matters: Make sure milk or water is warm, not hot, to properly activate the yeast.

  • Even browning: Rotate baking sheets halfway through baking if needed.

  • Flavor ideas: Sprinkle with garlic salt, everything bagel seasoning, or cinnamon sugar instead of plain salt.
