Ingredients

Scale
  • 2 cups buttermilk pancake mix

  • 1 lb breakfast sausage (bulk or links, cooked and crumbled)

  • 4 large eggs

  • 1 cup whole milk

  • 1/2 cup pure maple syrup

  • 2 tbsp butter (for greasing the baking dish)

Instructions

  • Preheat Oven
Preheat your oven to 350°F (175°C). Grease a large baking dish with butter.

  • Cook the Sausage
In a skillet over medium heat, cook the sausage until browned and crumbly. Drain any excess grease.

  • Prepare the Batter
In a mixing bowl, whisk together the pancake mix, eggs, and milk until just combined.
    Small lumps are perfectly fine!

  • Add Flavor
Fold in half of the maple syrup and a handful of the cooked sausage pieces.

  • Layer the Casserole
Pour half of the pancake batter into the prepared baking dish.
Add the remaining sausage evenly across the layer.
Pour the rest of the batter over the top.

  • Bake
Bake uncovered for 30–35 minutes, or until the casserole is golden brown, springy to the touch, and cooked through.

  • Serve
Slice and serve warm with extra maple syrup drizzled on top.

Notes

  • Make it cheesy: Add a sprinkle of cheddar on top for a savory twist.

  • Upgrade flavor: Mix cinnamon or vanilla into the batter for extra sweetness.

  • Make ahead: Prepare the casserole the night before and bake in the morning.

  • Use links: If using sausage links, chop into bite-size pieces before mixing in.
