Overnight French Toast Casserole: The Ultimate Make-Ahead Breakfast Everyone Loves

Overnight French Toast Casserole is an easy, comforting breakfast that’s perfect for weekends, holidays, or feeding a crowd. Everything is prepared the night before, so in the morning all you have to do is bake and enjoy a warm, sweet, and cozy dish with a crunchy cinnamon topping and soft, custardy bread inside.

Ingredients

Scale

French Toast Casserole

  • 1 loaf French bread or thick Texas toast

  • 8 large eggs

  • 2 cups half-and-half

  • ½ cup milk

  • 3 tablespoons granulated sugar

  • 1½ teaspoons pure vanilla extract

  • ½ teaspoon ground cinnamon

  • ½ teaspoon ground nutmeg

  • ½ teaspoon salt

Cinnamon Crunch Topping

  • sticks butter, softened

  • 1 cup light brown sugar, packed

  • 1 tablespoon light corn syrup (optional)

  • 1 teaspoon ground cinnamon

  • ½ teaspoon ground nutmeg

Instructions

  • Prepare the Dish
Grease a 9×13-inch baking dish with butter or cooking spray.

  • Arrange the Bread
Slice the bread into 1-inch thick slices. Arrange them in rows in the baking dish, slightly overlapping.

  • Make the Custard
In a large bowl, whisk the eggs. Add half-and-half, milk, sugar, vanilla, cinnamon, nutmeg, and salt. Whisk until smooth.

  • Soak the Bread
Pour the egg mixture evenly over the bread. Spoon some liquid between the slices so all the bread is well soaked. Cover with foil and refrigerate overnight.

  • Preheat & Flip
The next morning, preheat the oven to 350°F (175°C). Gently flip each bread slice to ensure even soaking.

  • Prepare the Topping
In a medium bowl, mix all topping ingredients until well combined. Spoon and spread the topping evenly over the bread, like frosting a cake.

  • Bake
Bake uncovered for 35–40 minutes, until puffed, golden, and lightly crisp on top.

  • Serve
Let cool slightly, then serve warm. Enjoy as is or with maple syrup and fresh fruit.

Notes

  • For crispier slices, use a larger pan or two 9×13 pans so the bread isn’t packed too tightly.

  • Bakery-style sliced bread or sourdough works great and saves time.

  • Forgot to prepare it overnight? Let the bread soak for at least 30 minutes before baking.

  • Add-ins like chopped pecans, walnuts, or fresh berries work beautifully.
