Overnight French Toast Casserole is an easy, comforting breakfast that’s perfect for weekends, holidays, or feeding a crowd. Everything is prepared the night before, so in the morning all you have to do is bake and enjoy a warm, sweet, and cozy dish with a crunchy cinnamon topping and soft, custardy bread inside.
1 loaf French bread or thick Texas toast
8 large eggs
2 cups half-and-half
½ cup milk
3 tablespoons granulated sugar
1½ teaspoons pure vanilla extract
½ teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ teaspoon salt
1½ sticks butter, softened
1 cup light brown sugar, packed
1 tablespoon light corn syrup (optional)
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
Prepare the Dish
Grease a 9×13-inch baking dish with butter or cooking spray.
Arrange the Bread
Slice the bread into 1-inch thick slices. Arrange them in rows in the baking dish, slightly overlapping.
Make the Custard
In a large bowl, whisk the eggs. Add half-and-half, milk, sugar, vanilla, cinnamon, nutmeg, and salt. Whisk until smooth.
Soak the Bread
Pour the egg mixture evenly over the bread. Spoon some liquid between the slices so all the bread is well soaked. Cover with foil and refrigerate overnight.
Preheat & Flip
The next morning, preheat the oven to 350°F (175°C). Gently flip each bread slice to ensure even soaking.
Prepare the Topping
In a medium bowl, mix all topping ingredients until well combined. Spoon and spread the topping evenly over the bread, like frosting a cake.
Bake
Bake uncovered for 35–40 minutes, until puffed, golden, and lightly crisp on top.
Serve
Let cool slightly, then serve warm. Enjoy as is or with maple syrup and fresh fruit.
For crispier slices, use a larger pan or two 9×13 pans so the bread isn’t packed too tightly.
