  • 1 cup carrots, sliced

  • 4 oz mushrooms, sliced

  • 1 large rib celery (or 2 small), thinly sliced

  • 1 large shallot or small onion, chopped

  • Seasoned salt and pepper, to taste

  • 2 cloves garlic, minced

  • 1 teaspoon poultry seasoning

  • Pinch dried thyme

  • 3 tablespoons gluten-free flour (or all-purpose flour)

  • 2 cups chicken stock or broth

  • 1 cup milk (any kind, unsweetened almond milk works well)

  • 12 oz gluten-free gnocchi

  • 1½ cups cooked shredded chicken breast (about ½ lb)

  • ½ cup frozen peas

Instructions

  • Sauté vegetables
    Heat a Dutch oven over medium-high. Melt butter, then add carrots, mushrooms, celery, and shallots/onion. Cook 3–4 minutes until mushrooms release their liquid and it evaporates. Season with salt and pepper. Continue cooking until vegetables are tender, about 6–7 minutes.

  • Add aromatics
    Stir in garlic, poultry seasoning, and thyme. Cook 1–2 minutes until fragrant.

  • Create the base
    Sprinkle flour over the vegetables and stir to coat. Cook for 1 minute to remove the raw flour taste.

  • Add liquids
    Slowly pour in chicken broth while stirring to prevent lumps. Add milk and bring to a gentle simmer.

  • Cook gnocchi
    Stir in gnocchi. Reduce heat to medium and simmer 5–6 minutes, stirring often, until gnocchi are tender and the sauce thickens.

  • Finish
    Add shredded chicken and peas. Heat through, taste, and adjust seasoning. Serve warm in bowls.
