2 large boneless, skinless chicken breasts (about 1 lb)
2 tbsp Dijon mustard
2 tbsp pure maple syrup 🍁

1 garlic clove, minced
1 tbsp apple cider vinegar or lemon juice
½ tsp salt
¼ tsp black pepper
2 medium sweet potatoes, peeled and cubed
1 tbsp olive oil
½ tsp smoked paprika
½ tsp salt
Freshly ground black pepper, to taste
2 cups cooked quinoa or brown rice
1 cup baby spinach or kale
¼ cup toasted pecans or walnuts 🌰
