Made with simple keto-friendly ingredients, these fritters come together fast and cook beautifully in the air fryer—no deep frying required!
1 lb ground chicken (or minced chicken breast)
1 cup shredded mozzarella cheese (or cheddar, Monterey Jack, or blend)
¼ cup almond flour
1 large egg
2 cloves garlic, minced (or 1 tsp garlic powder)
2 tablespoons fresh parsley, chopped
2 scallions (green onions), finely chopped
¼ teaspoon red pepper flakes (optional)
Salt and black pepper, to taste
Oil spray
If using whole chicken breast, cut into chunks and pulse in a food processor until coarsely minced.
Transfer chicken to a bowl. Add almond flour, egg, shredded cheese, garlic, parsley, scallions, red pepper flakes (if using), salt, and pepper.
Mix until well combined.
Lightly spray the air fryer tray or basket with oil.
Scoop the mixture using an ice cream scoop or spoon and place on the tray. Gently flatten each scoop into a fritter shape.
Spray the tops lightly with oil.
Air fry at 380°F (193°C) for 15 minutes, or until golden brown and cooked through.
Serve warm, garnished with extra green onions if desired.
Don’t overcrowd: Leave space between fritters for even browning.
Extra crisp: Flip halfway through cooking for a crispier finish.
Cheese swaps: Try pepper jack for heat or parmesan for a sharper flavor.
Dipping ideas: Sriracha mayo, ranch, garlic aioli, or sour cream all work great.
