Tamago Sando is a beloved Japanese sandwich known for its ultra-creamy egg filling and pillowy soft milk bread. With simple ingredients and minimal prep, this sandwich makes a fantastic light lunch, breakfast-on-the-go, or a fun lunchbox surprise for kids. The secret is perfectly boiled eggs combined with rich Japanese mayonnaise for a silky, melt-in-your-mouth texture.

Egg Salad

  • 6 large eggs

  • ¼ tsp sugar

  • ¼ tsp salt

  • ¼ tsp ground black pepper

  • 12 tsp milk or plant milk (optional — helps loosen hard-boiled eggs)

  • 4 Tbsp Japanese mayonnaise (such as Kewpie)

Sandwich

  • 4 slices Japanese milk bread (shokupan)

  • 2 Tbsp unsalted butter, softened

  • Sliced chives for garnish (optional)

Instructions

1️⃣ Boil the Eggs

  1. Fill a medium pot with enough water to cover the eggs and bring to a boil.

  2. Carefully lower eggs into the pot.

    • For medium soft-boiled eggs: Boil 7 minutes, turn off heat, rest 1 minute.

    • For fully hard-boiled eggs: Boil 10 minutes.

  3. Transfer eggs to an ice bath for 2 minutes to stop cooking.

  4. Peel while still slightly warm.

2️⃣ Make the Egg Salad

  1. Roughly mash eggs with a fork into small pieces (pea-sized).

  2. Add sugar, salt, black pepper, and mayonnaise.

  3. If needed, add milk to reach a creamy consistency.

  4. Taste and adjust seasoning.

3️⃣ Assemble the Sandwiches

  1. Spread ½ Tbsp butter on each slice of bread.

  2. Spoon the egg salad onto one slice and top with another, buttered sides inward.

  3. Gently press to seal and trim crusts for authentic style (optional but traditional).

  4. Slice in half. Garnish with chives if desired.
