Peaches
2 yellow peaches, pitted and sliced
Peach Glaze
½ cup (160 g) peach preserves
1 tablespoon extra virgin olive oil
1 teaspoon soy sauce
1 teaspoon apple cider vinegar
1 teaspoon Dijon mustard
½ teaspoon minced garlic
½ teaspoon kosher salt
⅛ teaspoon black pepper
⅛ teaspoon red pepper flakes
Chicken
2 pounds boneless, skinless chicken thighs
1 teaspoon kosher salt
½ teaspoon black pepper
½ teaspoon chili powder
2 tablespoons extra virgin olive oil
1 medium jalapeño pepper, thinly sliced
1. Make the Peach Glaze
In a medium bowl, whisk together peach preserves, olive oil, soy sauce, apple cider vinegar, Dijon mustard, garlic, salt, black pepper, and red pepper flakes. Set aside.
2. Season the Chicken
Pat chicken dry with paper towels. Combine salt, black pepper, and chili powder in a small bowl, then rub evenly over both sides of the chicken thighs.
3. Cook the Chicken
Heat olive oil in a large nonstick skillet over medium heat. Once hot, add chicken thighs (cook in batches if needed). Cook for 5 minutes per side, or until golden and cooked through (165°F internal temperature). Remove from skillet and keep warm.
4. Sauté Jalapeños & Peaches
In the same skillet, increase heat to medium. Add sliced jalapeños and cook for 3 minutes. Add peach slices and cook another 3 minutes, until softened.
5. Add Glaze & Finish
Pour the prepared peach glaze into the skillet. Stir to coat the peaches and jalapeños evenly. Return the chicken to the pan and spoon the glaze over the top. Cook for 1–2 minutes, until heated through.
6. Serve Warm
Garnish with extra jalapeño slices or fresh herbs, and serve immediately.
