  • 2 boneless, skinless chicken breasts

  • 34 garlic cloves, minced

  • 1 cup heavy cream

  • 1 cup low-sodium chicken broth

  • ½ cup freshly grated Parmesan cheese

  • ½ cup sun-dried tomatoes (in oil, drained and chopped)

  • 1 teaspoon Italian seasoning

  • ¼ teaspoon crushed red pepper flakes (adjust to taste)

  • 8 oz pasta (penne or fettuccine work well)

  • Fresh basil or parsley, chopped, for garnish

Optional Add-Ins

  • A handful of spinach or kale

  • Sautéed mushrooms

  • A squeeze of fresh lemon juice

  • Extra red pepper flakes for heat

Instructions

  • Cook pasta according to package directions until al dente. Drain and set aside.

  • Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt and pepper, then sear for 4–5 minutes per side until golden brown and fully cooked. Remove from skillet and set aside.

  • In the same skillet, add the minced garlic and cook for 1 minute, until fragrant.

  • Stir in the sun-dried tomatoes, Italian seasoning, and red pepper flakes.

  • Pour in the chicken broth and bring to a gentle simmer. Add the heavy cream and Parmesan cheese, stirring until the sauce is smooth and slightly thickened, about 4–5 minutes.

  • Slice the cooked chicken and return it to the skillet along with the cooked pasta. Toss until everything is well coated in the sauce.

  • Garnish with fresh basil or parsley and serve hot.

Notes

  • Use Fresh Parmesan: Freshly grated Parmesan melts better and gives the sauce a smoother texture.

  • Don’t Overcook Chicken: Remove it as soon as it’s cooked to keep it juicy.

  • Lighten It Up: Swap half-and-half or evaporated milk for the heavy cream if desired.

  • Add Greens: Stir in spinach or kale at the end—they’ll wilt perfectly in the hot sauce.
