  • 6 chicken thighs, bone-in and skin-on

  • ⅓ cup honey

  • 2 tablespoons soy sauce

  • 1 teaspoon rice vinegar

  • 1 teaspoon oil

  • 2 tablespoons minced garlic

Instructions

  • Prepare the chicken:
    Pat the chicken thighs dry with paper towels and set aside.

  • Make the sauce:
    In a small bowl, mix the honey, soy sauce, and rice vinegar. Set aside.

  • Sear the chicken:
    Heat the oil in a large skillet over medium-high heat. Add the chicken thighs skin-side down and cook for 5–7 minutes without moving, until the skin is golden and crispy.

  • Cook through:
    Reduce the heat to medium, flip the chicken, and cook for another 7–10 minutes, until the internal temperature reaches 165°F (74°C).

  • Remove chicken:
    Transfer the chicken to a plate, leaving about 2 tablespoons of chicken fat in the pan.

  • Cook the garlic:
    Add the minced garlic to the skillet and cook for 30–60 seconds, just until fragrant.

  • Glaze:
    Pour in the sauce mixture and cook until it foams and thickens into a glossy glaze.

  • Finish:
    Return the chicken to the pan and spoon the sauce generously over the thighs. Serve immediately.

Notes

  • Dry skin = crispy skin: Pat the chicken very dry before cooking.

  • Don’t move the chicken while searing—this helps the skin crisp properly.

  • Watch the sauce closely; honey thickens fast and can burn if overheated.

  • Serve with rice, noodles, mashed potatoes, or steamed vegetables.
