  • 8 boneless, skinless chicken thighs

  • 2 tablespoons cornflour (cornstarch)

  • ½ teaspoon salt

  • ½ teaspoon black pepper

  • 2 tablespoons vegetable oil

  • 1 tablespoon unsalted butter

  • 4 garlic cloves, minced

  • 110 g (⅓ cup) honey

  • 80 ml (⅓ cup) chicken stock

  • 1 tablespoon rice vinegar

  • 1 tablespoon light soy sauce

To Serve (Optional):

  • 1 tablespoon finely chopped fresh parsley

  • ½ teaspoon chili flakes

  • Boiled rice

Instructions

  • Coat the chicken
    Place the chicken thighs in a bowl. Add the cornflour, salt, and pepper, and toss until the chicken is evenly coated.

  • Sear the chicken
    Heat the vegetable oil in a large frying pan over high heat. Add the chicken and cook on one side for 4–5 minutes until golden brown. Flip and cook for another 2 minutes.

  • Add garlic
    Add the butter to the pan and allow it to melt. Stir in the garlic, reduce heat to medium, and cook briefly so the garlic becomes fragrant without burning.

  • Make the sauce
    In a small bowl, mix together the honey, chicken stock, rice vinegar, and soy sauce.

  • Simmer
    Pour the sauce into the pan. Increase heat and bring to a boil, then reduce to a simmer for 4–5 minutes, until the sauce thickens and the chicken is fully cooked through.

  • Serve
    Sprinkle with parsley and chili flakes if desired, and serve hot over boiled rice.

Notes

  • Cornstarch creates crisp edges and helps the sauce cling to the chicken.

  • Use boneless thighs for juicier results, but chicken breast works if sliced evenly.

  • Keep the garlic on medium heat to prevent bitterness.
