The Hobo Casserole is a comforting, hearty dish that transforms simple pantry staples into a rich, satisfying meal. Layers of seasoned ground beef, tender potatoes, creamy mushroom sauce, and melted cheddar cheese make every bite warm and flavorful. Perfect for busy weeknights, potlucks, or meal prep, this casserole is easy to assemble and loved by both kids and adults.

Ingredients

Scale
  • 1 lb ground beef

  • 1 medium onion, chopped

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • 4 medium potatoes, thinly sliced

  • 1 can (10.5 oz) cream of mushroom soup

  • ½ cup milk

  • 1½ cups shredded cheddar cheese

  • ½ teaspoon paprika (optional, for garnish)

  • 1 tablespoon butter, melted

Instructions

  1. Prepare the Ingredients:
Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish. Peel and thinly slice the potatoes—using a mandoline slicer can make this easier and ensure even cooking.

  2. Cook the Ground Beef:
In a large skillet over medium heat, cook the ground beef and chopped onion until the beef is browned and the onion is soft (about 5–7 minutes). Drain excess grease.
Season with garlic powder, onion powder, salt, and black pepper. Stir to evenly distribute the flavors.

  3. Assemble the Casserole:

    • Spread half of the potato slices in an even layer on the bottom of the baking dish.

    • Spoon half of the cooked beef mixture over the potatoes.

    • Repeat with the remaining potatoes and beef.

  4. Make the Creamy Sauce:
In a small bowl, mix the cream of mushroom soup with milk until smooth. Pour evenly over the casserole, letting it seep into all layers.

  5. Add Cheese and Bake:
Sprinkle shredded cheddar cheese over the top. Drizzle melted butter over the cheese. Cover the dish with aluminum foil and bake for 45 minutes. Remove foil and bake an additional 15 minutes, until the cheese is bubbly and golden.

  6. Serve:
Let the casserole rest for 5–10 minutes before serving. Sprinkle with paprika for garnish if desired.

Notes

  • For quicker cooking, slice potatoes thinly and evenly.

  • Add extra veggies like bell peppers or mushrooms for more flavor and nutrition.

  • Use sharp cheddar for a more pronounced cheesy taste.

  • Store leftovers in the fridge for up to 3 days; reheat in the oven for best results.
