5 chicken thighs, bone-in and skin-on
¼ cup butter
1 tablespoon olive oil
Salt, to taste
Black pepper, to taste
3 teaspoons minced garlic
Fresh parsley, chopped (for garnish)
Preheat your oven to 400°F (200°C) and position the oven rack in the center.
Pat the chicken thighs dry with paper towels, then season generously with salt and black pepper on all sides.
Heat the olive oil in a 10-inch cast iron skillet over medium heat.
