Ground Beef and Potatoes

This Ground Beef and Potatoes skillet is a simple, hearty dinner made with everyday ingredients in under 30 minutes. Tender diced potatoes, seasoned ground beef, and veggies all simmer together in a savory sauce for a comforting, family-friendly meal. Perfect for busy weeknights — with just one pan to clean!

  • 2 Tbsp olive oil

  • 1 lb lean ground beef

  • 1 medium yellow onion, diced

  • 1 red bell pepper, diced

  • 1.5 lbs Yukon gold potatoes, peeled & cubed

  • 1 cup beef stock (or water)

  • 2 Tbsp Worcestershire sauce

  • 1 tsp Dijon mustard

  • 23 green onions, chopped (for garnish)

Spice Mix (use half for beef, half for potatoes)

  • 1 Tbsp ground cumin

  • 2 tsp paprika

  • 2 tsp dried thyme

  • 1 tsp garlic powder

  • 1 tsp salt

  • ½ tsp black pepper

Instructions

1️⃣ Cook the Beef

  1. Heat olive oil in a large skillet over medium heat.

  2. Add ground beef and half the spice mix.

  3. Cook until browned, breaking it into crumbles.

  4. Transfer to a plate and set aside.

2️⃣ Cook the Potatoes

  1. In the same skillet, add cubed potatoes.

  2. Season with the remaining spice mix.

  3. Pour in the beef stock.

  4. Cover and cook 8–10 minutes, stirring occasionally, until tender and liquid reduces.

3️⃣ Sauté the Veggies

  1. Add diced onion and bell pepper to the potatoes.

  2. Cook 3–4 minutes, until softened.

4️⃣ Combine & Finish

  1. Return cooked beef to the skillet.

  2. Stir in Worcestershire sauce and Dijon mustard.

  3. Taste and adjust seasonings if needed.

5️⃣ Serve

Sprinkle green onions over the top and serve hot!

Notes

✔ Add chili flakes or hot sauce for a spicy kick
✔ Swap Yukon gold potatoes for russets or baby potatoes
✔ Add frozen peas or corn for extra veggies
✔ Top with cheddar cheese and broil 2 minutes for a cheesy version
✔ Replace ground beef with ground turkey for a lighter meal
