This homemade Grilled Cheese Burrito is a crave-worthy twist on a fast-food favorite! It’s packed with seasoned beef, fluffy rice, melty cheddar and mozzarella, creamy sauces, and then grilled with cheese on the outside for an irresistible golden crust. Quick, indulgent, and totally delicious — the perfect weeknight treat!

  • 1 lb ground beef

  • 1 packet taco seasoning (or homemade mix)

  • 1 cup cooked white rice

  • ½ cup sour cream

  • ½ cup nacho cheese sauce

  • ¼ cup chipotle sauce

  • 1 cup shredded cheddar cheese

  • 1 cup shredded mozzarella cheese

  • 4 large flour tortillas

  • Butter or oil — for grilling

Instructions

1️⃣ Cook the Beef (8–10 minutes)

  • In a skillet over medium heat, brown the ground beef.

  • Drain excess grease, then stir in taco seasoning + ¼ cup water.

  • Simmer 5 minutes until saucy and well-seasoned.

2️⃣ Warm the Tortillas

  • Heat tortillas in a dry skillet for 10–15 seconds per side or microwave for 20 seconds until pliable.

3️⃣ Assemble the Burritos (5 minutes)

For each tortilla, layer down the center:

  • Cooked rice

  • Seasoned beef

  • Nacho cheese

  • Chipotle sauce

  • Sour cream

  • Sprinkle cheddar + mozzarella

Fold sides inward and roll tightly into a burrito.

4️⃣ Grill with Cheese (3–4 minutes per side)

  • Melt 1–2 tbsp shredded cheese directly in a clean skillet.

  • Place burrito seam-side down over the cheese → cook until crisp.

  • Flip and grill the other side the same way.
