  • lbs sirloin steak, cut into bite-sized cubes

  • lbs baby potatoes, halved or quartered

  • 4 tablespoons olive oil, divided

  • 4 tablespoons butter

  • 56 cloves garlic, minced

  • 1 teaspoon paprika

  • 1 teaspoon dried Italian herbs

  • Salt and black pepper, to taste

  • Fresh parsley, chopped (for garnish)

Instructions

  • Cook the Potatoes
    Heat 2 tablespoons olive oil in a large skillet over medium heat. Add potatoes and season with salt, pepper, and paprika. Cook for about 15 minutes, stirring occasionally, until golden brown and fork-tender. Remove from the pan and set aside.

  • Season and Sear Steak
    Season steak cubes with salt, black pepper, and Italian herbs. In the same skillet, add 1 tablespoon olive oil and 2 tablespoons butter. Add steak in a single layer (work in batches if needed) and sear for 2–3 minutes per side until nicely browned. Avoid overcooking.

  • Add Garlic Butter
    Reduce heat to medium-low. Add remaining butter and minced garlic. Sauté for about 1 minute, until fragrant.

  • Combine Everything
    Return potatoes to the skillet and toss with the steak and garlic butter. Cook for 1–2 minutes until heated through and well coated.

  • Garnish and Serve
    Sprinkle with fresh parsley and serve hot.
