Ingredients

Scale
  • 4 boneless, skinless chicken breasts

  • 1.5 lbs baby potatoes, halved

  • 1 cup chicken broth

  • ½ cup grated Parmesan cheese

  • 4 cloves garlic, minced

  • 1 tablespoon Italian seasoning

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • ½ teaspoon red pepper flakes (optional)

  • 2 tablespoons olive oil

  • Fresh parsley, for garnish (optional)

Instructions

  1. Prep the Ingredients
Wash and halve the baby potatoes. Mince the garlic and set aside.

  2. Season the Chicken
Rub chicken breasts with olive oil, Italian seasoning, salt, pepper, and red pepper flakes (if using).

  3. Layer in the Crockpot
Place the potatoes in the bottom of the crockpot. Lay the seasoned chicken on top.

  4. Add Broth
Pour chicken broth over the potatoes and chicken.

  5. Add Garlic & Parmesan
Sprinkle minced garlic over the chicken, then top with grated Parmesan cheese.

  6. Cook
Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until chicken is tender and potatoes are soft.

  7. Check Doneness
Chicken should reach 165°F (75°C) internally, and potatoes should be easily pierced with a fork.

  8. Serve
Plate the chicken and potatoes, spooning some of the flavorful sauce from the crockpot over the top.

  9. Garnish
Add fresh chopped parsley for color and brightness (optional).

Notes

  • Brown the chicken first (optional): Sear the chicken in a hot pan for 2–3 minutes per side before placing it in the crockpot for extra flavor.

  • Use freshly grated Parmesan for a richer taste and smoother melt.

  • Add veggies: Baby carrots, green beans, or mushrooms can cook right alongside the potatoes.

  • Make it creamy: Stir in ¼ cup heavy cream or softened cream cheese during the last 15 minutes of cooking for a creamy garlic-Parmesan sauce.
