  • 1 lb sirloin steak, cut into bite-sized pieces

  • 3 tablespoons unsalted butter

  • 4 cloves garlic, minced

  • Salt and black pepper, to taste

  • 1 tablespoon olive oil

  • Fresh parsley, chopped (for garnish)

For the Creamy Parmesan Pasta

  • 8 oz fettuccine or spaghetti

  • 1 cup heavy cream

  • ½ cup grated Parmesan cheese

  • 2 tablespoons unsalted butter

  • 2 cloves garlic, minced

  • Salt and black pepper, to taste

  • ¼ teaspoon red pepper flakes (optional)

Instructions

1. Cook the Pasta

  1. Boil pasta according to package directions until al dente.

  2. Reserve 1 cup pasta water, then drain and set aside.


2. Make the Steak Bites

  1. Heat olive oil in a large skillet over medium-high heat.

  2. Season steak pieces with salt and pepper.

  3. Add steak in a single layer (cook in batches if needed).

  4. Sear for 2–3 minutes per side, until browned and cooked to your liking.

  5. Remove steak from the pan and set aside.


3. Make the Creamy Parmesan Sauce

  1. In the same skillet, melt butter over medium heat.

  2. Add garlic and cook 1 minute until fragrant.

  3. Pour in the heavy cream and bring to a gentle simmer.

  4. Reduce heat and stir in Parmesan until melted and smooth.

  5. Season with salt, pepper, and red pepper flakes if desired.


4. Combine and Serve

  1. Add cooked pasta to the sauce and toss to coat.

  2. If too thick, add reserved pasta water a little at a time.

  3. Return steak bites to the skillet and gently mix.

  4. Garnish with fresh parsley and serve warm.

Notes

  • Cut steak evenly so every bite cooks at the same speed.

  • Don’t overcrowd the skillet—it helps the steak get a good sear.
