  • 1 lb boneless skinless chicken breasts, cut into bite-sized pieces

  • 4 cloves garlic, minced

  • 4 tbsp unsalted butter, divided

  • 8 oz fettuccine or linguine

  • 1 cup freshly grated Parmesan cheese

  • ½ cup heavy cream

  • Salt and pepper, to taste

  • Fresh parsley, chopped (optional garnish)

Instructions

  1. Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente. Reserve ½ cup pasta water, then drain.

  2. Meanwhile, heat 2 tbsp butter in a large skillet over medium-high heat.

  3. Add chicken pieces, season with salt and pepper, and cook 5–7 minutes, until golden and fully cooked.

  4. Add minced garlic and cook for 1 minute more until fragrant.

  5. Reduce heat to medium-low. Add heavy cream, remaining 2 tbsp butter, and Parmesan, stirring until melted into a creamy sauce.

  6. Add cooked pasta to the sauce, tossing to coat. Add a splash of reserved pasta water if needed to loosen the sauce.

  7. Garnish with fresh parsley and serve hot!

Notes

  • Don’t overcrowd the pan—searing in batches keeps the chicken crisp and golden.

  • Use freshly grated Parmesan—pre-shredded doesn’t melt as smoothly.

  • If sauce thickens too much, add a bit more pasta water to reach the perfect silky texture.
