For the Soup Base

  • 1 lb lean ground beef or ground turkey

  • 1 small yellow onion, finely diced

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • 1 (24-oz) jar marinara sauce

  • 4 cups low-sodium chicken broth

  • 1 (15-oz) can crushed tomatoes

  • 8 lasagna noodles, broken into bite-size pieces

For the Creamy Layer

  • ½ cup heavy cream

  • ½ cup ricotta cheese

  • 1 cup shredded mozzarella cheese

  • ¼ cup grated Parmesan cheese

For Garnish

  • Fresh basil or parsley, chopped

  • Extra Parmesan cheese

Instructions

  1. Brown the meat
    Heat olive oil in a large soup pot or Dutch oven over medium-high heat. Add ground beef or turkey and cook until browned, breaking it up as it cooks. Drain excess fat if needed.

  2. Sauté the aromatics
    Add the diced onion and cook for 3–4 minutes, until softened. Stir in garlic and cook for 30 seconds until fragrant.

  3. Build the soup base
    Stir in Italian seasoning, red pepper flakes, salt, and black pepper. Add marinara sauce, chicken broth, and crushed tomatoes. Bring to a gentle boil.

  4. Simmer
    Reduce heat to medium-low and simmer uncovered for 15–20 minutes to let the flavors develop.

  5. Cook the noodles
    Add broken lasagna noodles directly to the pot. Cook for 10–12 minutes, stirring occasionally, until noodles are tender. Add more broth if the soup thickens too much.

  6. Make it creamy
    Lower the heat and stir in heavy cream, ricotta, mozzarella, and Parmesan. Stir gently until cheeses are melted and the soup is creamy. Taste and adjust seasoning.

  7. Serve
    Ladle into bowls and garnish with fresh basil or parsley and extra Parmesan. Serve hot with garlic bread or a simple salad.
