This Easy Cinnamon Roll Casserole is a warm, cozy breakfast that comes together with minimal effort and maximum flavor. Soft cinnamon roll pieces are soaked in a sweet vanilla-cinnamon syrup, baked until fluffy, and finished with a drizzle of icing. It’s perfect for holidays, weekends, or anytime you want a special breakfast without a lot of work.

  • 2 tubes refrigerated cinnamon rolls (8 rolls per tube, icing reserved)

  • ¼ cup salted butter, melted

  • ½ cup milk

  • ½ cup pure maple syrup

  • 3 large eggs

  • 2 teaspoons vanilla extract

  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.

  2. Pour the melted butter into the bottom of the dish.

  3. Remove the cinnamon rolls from the tubes and set the icing aside.

  4. Cut each cinnamon roll into ¾-inch pieces and spread them evenly in the baking dish.

  5. In a bowl, whisk together the milk, maple syrup, eggs, vanilla, and cinnamon until smooth and well combined.

  6. Pour the mixture evenly over the cinnamon roll pieces.

  7. Bake for 35–45 minutes, until puffed and lightly golden on top.

  8. Let cool for 10–15 minutes, then drizzle with the reserved icing. Serve warm and enjoy.

Notes

  • For extra richness, use whole milk or half-and-half.

  • If the top browns too quickly, loosely cover with foil during the last 10 minutes of baking.

  • Add-ins like chopped pecans or walnuts can give extra texture.

  • This casserole can be assembled the night before and baked fresh in the morning.
