8 garlic cloves, minced
3 cups cherry tomatoes, halved
4 tablespoons olive oil
1 cup dry white wine
1 teaspoon white sugar
1 teaspoon chili flakes
2 tablespoons tomato paste
2 cups heavy cream (or dairy-free alternative, 1:1 swap)
1 tablespoon flour
½ cup chopped fresh parsley
8 oz rigatoni pasta, cooked al dente
1 teaspoon smoked paprika
1 teaspoon garlic powder
Salt and black pepper, to taste
Freshly grated Parmesan cheese (optional, for serving)
Mince the garlic and slice the cherry tomatoes in half. Cook the pasta according to package instructions until al dente. Set aside.
Heat olive oil in a large pan over medium heat. Add the minced garlic and ½ teaspoon salt. Sauté for about 5 minutes, stirring often, until golden and fragrant.
Add the cherry tomatoes and another ½ teaspoon salt. Cook for 10–15 minutes, stirring occasionally, until the tomatoes soften and release their juices.
Pour in the dry white wine and let it simmer for 5 minutes. Stir in the chili flakes and tomato paste until well combined.
Reduce heat to low and pour in the heavy cream. In a small bowl, whisk the flour with 2 tablespoons water to create a slurry. Slowly stir the slurry into the sauce. Simmer for 5–10 minutes, stirring occasionally, until thickened.
Stir in the chopped parsley, smoked paprika, garlic powder, and salt and pepper to taste. Add the cooked rigatoni and gently toss to coat the pasta evenly.
Let the pasta simmer in the sauce for 5 minutes. Remove from heat, cover, and let rest for another 5 minutes so the flavors can meld.
Serve warm, garnished with freshly grated Parmesan, extra parsley, and a pinch of black pepper.
