8 garlic cloves, minced
3 cups cherry tomatoes, halved
4 tablespoons olive oil
1 cup dry white wine
2 tablespoons tomato paste
1 teaspoon chili flakes
2 cups heavy cream (or plant-based cream, 1:1 swap)
1 tablespoon all-purpose flour
½ cup chopped parsley
8 oz rigatoni pasta, cooked al dente
1 teaspoon smoked paprika
1 teaspoon garlic powder
1 teaspoon sugar
Salt & pepper, to taste
Freshly grated Parmesan (optional)
Mince garlic and halve cherry tomatoes. Cook pasta according to package instructions until al dente. Reserve ½ cup pasta water.
Heat olive oil in a large pan over medium heat. Add garlic and ½ teaspoon salt. Sauté about 5 minutes until lightly golden and fragrant.
Add cherry tomatoes and another ½ teaspoon salt. Cook 10–15 minutes, stirring occasionally, until softened and juicy.
Pour in white wine and simmer 5 minutes. Stir in chili flakes and tomato paste until combined.
Pour in heavy cream. In a small bowl, whisk flour with 2 tablespoons water to make a slurry. Slowly stir into sauce. Simmer 5–10 minutes until slightly thickened.
Stir in parsley, smoked paprika, garlic powder, sugar, salt, and pepper. Add cooked rigatoni and toss to coat. Add a splash of pasta water if needed.
Let simmer 5 minutes. Remove from heat, cover, and rest 5 minutes.
Top with Parmesan, extra parsley, and black pepper.
Use fresh garlic for maximum flavor.
Add grilled chicken, shrimp, or mushrooms for protein.
For extra richness, stir in a knob of butter at the end.
Swap rigatoni for penne, fusilli, or fettuccine.
