5 boneless, skinless chicken thighs, patted dry
1 teaspoon poultry seasoning (such as 21 Salute Seasoning from Trader Joe’s)
Salt and black pepper, to taste
2 tablespoons unsalted butter
2 tablespoons unsalted butter
2 tablespoons garlic, finely chopped
2 tablespoons all-purpose flour
1 cup chicken broth
½ cup heavy whipping cream
½ cup Parmesan cheese (or Prieve cheese), finely grated
Salt and black pepper, to taste
2 teaspoons fresh dill, finely chopped (optional, for garnish)
Preheat the oven to 375°F (190°C). Season the chicken thighs on both sides with poultry seasoning, salt, and pepper.
Melt 2 tablespoons butter in an oven-proof skillet over medium heat. Add the chicken thighs and sear for 2–3 minutes per side, until golden. Remove the chicken from the skillet and set aside.
In the same skillet, melt the remaining butter. Add the garlic and sauté for about 1 minute, stirring frequently.
Stir in the flour and cook for 1 minute, stirring constantly. Slowly pour in the chicken broth while whisking, and cook until slightly thickened. Add the heavy cream, stir well, then add the Parmesan cheese. Taste and adjust seasoning with salt and pepper if needed.
Return the chicken thighs to the skillet, spooning the sauce over each piece. Transfer the skillet to the oven and bake uncovered for 30–35 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
Garnish with fresh dill and extra Parmesan cheese if desired. Serve hot.
Pat the chicken dry: This helps the seasoning stick and creates a better sear.
Don’t overcrowd the skillet: Sear the chicken in batches if needed for even browning.
Butter vs. oil: Butter adds rich flavor, but olive oil can be used if preferred.
Sauce consistency: If the sauce thickens too much, add a splash of chicken broth to loosen it.
