12 oz penne pasta
2 tablespoons unsalted butter
4 cloves garlic, minced
2 tablespoons all-purpose flour
2 cups whole milk
1 cup heavy cream
1 cup grated Parmesan cheese
½ teaspoon salt (adjust to taste)
¼ teaspoon black pepper
1 teaspoon Italian seasoning (optional)
Chopped fresh parsley, for garnish
Bring a large pot of salted water to a boil.
Add penne pasta and cook according to package instructions until al dente.
Drain and set aside.
In a large skillet over medium heat, melt the butter.
Add the minced garlic and sauté until fragrant, about 1 minute.
Sprinkle flour over the garlic and whisk continuously for 1–2 minutes to form a smooth roux.
Slowly pour in the milk and heavy cream, whisking constantly to avoid lumps.
Cook for 3–4 minutes until the sauce thickens slightly.
Stir in Parmesan cheese, salt, black pepper, and Italian seasoning (if using).
Cook another 1–2 minutes until the cheese is melted and the sauce is smooth.
Add the cooked penne pasta to the skillet and toss until fully coated in the sauce.
Remove from heat, garnish with fresh parsley, and serve warm.
Use fresh garlic: It gives the sauce the best flavor.
Whisk constantly: This keeps the sauce smooth and lump-free.
Don’t overcook the pasta: Al dente pasta holds the sauce better.
Make it heartier: Add grilled chicken, shrimp, or sautéed mushrooms.
